How many pages should a letter of thanks be?

Less than 1 page. Perhaps just one paragraph.

A letter of thanks should be not more than one page long. Keep it short, simple and sincere. It is the sentiment that counts, not the number of words.

Less than one. It should only be a paragraph, which generally will fit in a thank-you card, on a piece of stationery that is half the size of a standard piece of 8½"x11" paper, or on half a sheet of standard paper, which if you don't want the rest staring empty at you, you remedy by cutting the standard piece of paper in half. Also, it should be handwritten and either mailed or personally handed to the recipient by you in an envelope, not typed on your computer and emailed or printed out on your printer and mailed.
