    Prepare your carrots & potatoes then roast them in the roasting dish along side of your roast / joint once its been cooking for a while [maybe after an hour] of the meat cooking time [ maybe for a further 30 - 45 minutes ], then they will be ready together, making sure theres enough meat juices / fat for them to roast in.

    Kind of depends on what your end game is. If dry roasting-say on a sheet pan with meat, just coat them in a bit of oil and roast. They Will dry out a bit. If in a Braise-cooking in a liquid-say in a Dutch Oven, add them halfway through the cooking process of the meat-too early they will get mushy.

    You put your roast in the pan and your potatoes and carrots with your seasoning and 1 cup of water and put lid over it on 350 degrees for 5 to 6hrs then checking it off and till carrots and potatoes are tender as well as meat and at the right temp of 165 for meat using meat thermometer then take out of oven cut the meat and serve

    🥴 its easy. Wash and peel (optional) them if you want and throw them in with the roast.

    If your roast takes 4 hours to cook, then add the veggies in after 2 hours of roasting the roast. Whole. Not chopped. Depending on the sizes.
