I have cooked greens using both, (not at the same time!) but I prefer cayenne.

Neither in greens, but I have grown cayenne  and it has just the right amount of heat for me for dishes like chilli vin carne or curries.

Neither. Better than bouillon ham stock concentrate, a little onion and dress with vinegar at the table.

    red pepper flakes.

About the only time I use cayenne is in a chili.  For most things I use red pepper flakes.

Red pepper flakes - they give a small amount of color to the greens

I have three types of crushed red pepper flakes-regular, Medium Hot and Very Hot-I use the Very Hot, just not a lot.
