Why were the Romans so open about sex?

Prostitution was widely tolerated and even encouraged in the Roman Empire, and homosexuality was by and large tolerated.

Why were the romans so ahead of their time when it came to sexuality?

The Romans were not "ahead" of their time. They were "of" their time. As were the other major civilisations before, during and after the Roman Empire.

Because they had not yet adopted Christianity which was much more strict on sex believing it should only be between married couples.  In communities where Christianity and Islam never really took hold open sexual activity was never frowned upon.  Thailand is a good example as it was never controlled by European powers and the country is largely Buddhist, prostitution and homosexuality are just seen as normal sex with no stigma attached.  When British sailors first encountered Tahitians in the Pacific Ocean the sailors were amazed at the open sexual activity there.  Tahitians would be encountered having uninhibited sex anywhere with no shame or embarrassment and willingly had sex with the sailors at a charge of one nail for sex.  Captain Bligh had to order that any more nails were ripped out of the ship to pay for sex  and the man responsible would be flogged.  It was a warm paradise for the sailors and it was the sailors want to return to Tahiti and all the sex that caused the mutiny on the Bounty as apparently Captain Bligh was not the tyrant that the movies depict him as.

I am not sure you can call some of their sexual practices and entertainments 'ahead of their time'.  There are accounts of abuses done in public arenas that I will not detail.

10,000 Years ago it was okay to have sex with whoever you wanted whenever you wanted. It's not really "advanced" to return to that.

Homosexuality was not a relationship. It was distinctly the case of the Roman being the dominant participant and the submissive being a non-Roman, non-citizen – basically slave or prisoner.

It was when they converted to Christianity all the fun stopped.

Christianity with its sexual inhibitions came into existence during the Roman Empire.  This caused the lack of tolerance in the future.

Those things were mostly tolerated by all, everywhere, it is governments that try and fail to stop it.
