What is a good line spacing for paragraphs in a self-published book, and is half a line really too much?

Half a line is about right. Compare to other books to see how others are formatted.

Why don't you hit the space bar 57 times between each word and hit the carriage return 11 times between each line? Then you might have as many as 8 pages, or even 9, if you ever get that foreword completed.

Blank spaces between lines of print a half a line in height is ridiculous spacing for a book. It will look amateurish and like you're padding, trying to make it look longer than it is.
If you don't have a bare minimum of 50,000 words (and plenty of people would say 65,000), you don't have an actual book-length manuscript no matter how big your margins and gutters, the size of your font, or the line spacing.
