What's the acceptable blood alcohol concentration to perform surgery?
What if a surgeon had a mimosa at brunch and was scheduled to perform a minor procedure in a few hours?
Update:
what is the MINIMUM acceptable blood alcohol concentration?
Update 2:
I'm sorry, I meant MAXIMUM. What is the absolute most a surgeon could have in their system.
Update 3:
You know what I mean. Like the if you were driving, and got pulled over, and blow into the breathalyzer. What's the limit, but for doctors?

Doctors with scheduled procedures do not drink alcohol the same day. If it's a morning procedure, they don't drink the night before. They also don't drink when they're on call, ready to fill in for another doctor as needed.
So your first answer is correct. The only acceptable blood alcohol level for medical procedures is zero.
