If there was no Sun but Rigel took the place of Pluto, what effects would this have on Earth's climate?

    It would be too hot to be habitable. Also, the planets which could exist would be orbiting Rigel.

    earth would be either destroyed or totally inhabitable. The entire solar system would be totally disrupted if a large star appeared in place of Pluto while the Sun disappeared.  It depends on the timing, but the planets orbits would be totally disrupted. Some would wind up hitting Rigel, some lost to interstellar space, some in elongated orbits around Rigel. It would take a lot of computer simulation to determine the outcome.

    You have omitted to factor in Uranus. You should investigate Uranus to determine what state it's in. A small mirror will make it easier.
