Since the attached list includes it, I will say Star Wars (1977) is my favorite, although it's hardly the one that best represents the genre.

Master and Commander: The Far Side of the World or Captain Horatio Hornblower. I prefer realistic swashbuckler movies, not fake comedies like Pirates of the Caribbean.
