Is there a way to see what a private youtube video was before, when it wasn't made private?

Unfortunately, no. Unless someone saved the video, or if the video is made public again.

Anyway to find out what the video was before, when it wasn't made private? Try copy the sequence of numbers/letters after "watch=" in the URL bar, then paste it into a Google search. If the video was posted anywhere else with the link, it will show the title of the video.

When a YouTube user uploads a video, that video can be private, unpublished or public. After the video is uploaded, the account owner can change that setting. It is the same video, just the setting private, unpublished or public is changed. There is no change to the video content - only that specific YouTube setting of the video.
If the YouTube user uploads a new video, then that's a new video.
