Can diet make you ill? If so, what is the best diet to avoid disease?
I hear people say don't eat red meat, eat chicken or fish but it seems none of these foods really prevent disease......
but then I see some people who are so healthy!!!

Palaeo diet without meat. Only organic food.
These are different questions. The thing about meat is that it provides certain amino acids that we need. It is possible to get sufficient amino acids on a vegetarian diet, but it takes careful consideration of what one is eating. Soy protein is a good choice, and there are combinations, such as beans with rice, that provide more complete nutrition. As for disease- certain kinds of diets can cause diseases such as rickets and scurvy, but an overall balanced diet is possible without eating meat. Red meat is particularly bad for you, while fish is quite good for you. It takes some research into nutrients to balance any diet.
